This expert figure will share with you the history of mozzarella production in the area, illustrating the importance of fresh, quality ingredients.

You will learn the secrets of choosing the right ingredients, with a special focus on buffalo milk, the main ingredient for Mozzarella di Bufala Campana DOP. You may also be involved in gathering fresh ingredients, such as local herbs to use in the preparation.

The class will move to the processing area, where the cheesemaker will guide you through the milk curdling process. You will learn how to coagulate the milk to make curd, a crucial step in the production of mozzarella. You will have the opportunity to get your hands in the dough, literally, forming the curd into mozzarella balls. The cheesemaker will share with you traditional processing techniques, explaining how to achieve the perfect consistency and desired shape.

After forming, the salting stage will follow, which helps develop the mozzarella's characteristic flavor. The cheesemaker will explain the curing process and how it affects the flavor profile of the cheese.
